BAM!, a fine dining establishment located in the heart of Singapore has unveiled its new dining concept and menu. Celebrating its tenth anniversary, BAM! is changing things up with its own take on modern European cuisine, as conceptualised by Chef Shang Jhi.
The new dining concept takes patrons on a gastronomic journey that combines local produce and seasonal ingredients with Chef Shang Jhi’s refreshing takes on contemporary European fare. BAM!’s new menu features an array of delish meats, fresh seafood dishes and even a variety of vegetarian options, for a more balanced experience.
The restaurant’s new menu is underscored by two gourmet dining adventures: the six-course Tasting Menu, as well as the seven-course Experience Menu. Carefully curated and designed, both courses take guests on a delectable journey through bold new flavours and textures. No meal is complete without a tipple or two. Both the Tasting Menu and Experience Menu can be completed with additional Sake or wine pairings, to complement the fine dining fare.
For a luxe dining experience, the six-course Tasting Menu features a range of BAM!’s best dishes without compromising on quality, including French appetiser Egg Mimosa. A highlight from the Tasting Menu is Chef Shang Jhi’s Korean Abalone. Inspired by the familiar flavours of XO fried rice, the precious sea snails are served with Koshihikari rice and an XO sauce made with Iberico pork, brandy and Japanese scallops and anchovies.
For true gourmands, satiate your palate with the seven-course Experience Menu, a showcase of the best seasonal ingredients that Chef Shang Jhi has to offer. Relish in the New Zealand Lamb Rack, made with Lumina (formerly known as Te Mana) lamb. Nicknamed “Wagyu Lamb” for its textural similarities to one of the most expensive meats in the world, the luxurious star ingredient is served with an eggplant sandwich, of eggplant tempura and house-made eggplant caviar for a harmonious plate.
